Each quarter will be standardized to 120 lbs and contain the following based off of current inventory: 4 lb ribeye steaks 1" thick, 4 lb T-bone steaks or NY strip, 8 lb sirloin steak, 4 lb chuck steak, 6 lb Asian short ribs, 4 lb flank or flat-iron, 3 x 3.5 lb roasts assortment of heel, shoulder, rump, chuck, or London Broil, 10 lbs of other cuts either tri-tip roast or steaks, flap, cube, Teres Major, stew meat, carne asada, bratwurst, beef bacon or skirt. The balance will include up to 44 lb of ground beef.
