Each eighth will be standardized to 50 lbs and contain the following: 2 lb ribeye steaks 1" thick, 2 lb T-bone steaks or NY strip, 4 lb sirloin steak, 2 lb chuck steak, 3 lb Asian short ribs, 2 lb flank or flat-iron, 3 x 3.5 lb roasts either heel, shoulder, or London Broil, 5 lbs of other cuts either tri-tip, flap, cube, tri-tip, steak, bratwurst, beef bacon or skirt. The balance will include up to 23 lb of ground beef.
