Each eighth will be 50 lbs and contain the following: 4 lb ribeye steaks 1" thick, 4 lb T-bone steaks or NY strip, 2 lb sirloin steak, 3 lb Asian short ribs, 2 lb flank or flat-iron, 3 x 3.5 lb roasts either heel, shoulder, or London Broil, 5 lbs of other cuts either tri-tip, flap, cube steak, bratwurst, beef bacon or skirt. The balance will be up to 23 lb of ground beef.
