To get one quart of tallow, you'll generally need around 4 to 6 pounds of beef fat, though yields vary depending on fat quality, cleanliness, and rendering efficiency, with some people getting a quart from 4 lbs and others needing up to 10 lbs for a few quarts. A good rule of thumb is to expect roughly half the weight in rendered tallow, so 4 lbs of fat might give you 2 lbs (around 2 cups) of tallow, while 8 lbs might give you 4 lbs (about a quart). 

Our beef fat is pretty clean so tallow yield should be higher than regular, more "dirty" fat (more pieces of tissues). Each package of beef fat averages 1.5-2lbs.
